It keeps moisture out and provides excellent wearing comfort due to different hardness levels and flexibility.
A leather sole is generally considered to be of higher quality, but a rubber sole or a leather sole with a rubber insert reduces the risk of slipping on wet or smooth surfaces. Whichever option you prefer, you cannot go wrong with either one.
